The team at Restaurant Meudon are delighted to welcome Head Chef David Waters to the Meudon family. Born and raised in Cornwall, David’s passion for creating innovative and exceptional dishes, using ingredients sourced from his beloved homeland, is evident in every one of his wonderful culinary creations.
Despite studying Accountancy and Economics at university in Birmingham, David knew that he ultimately wanted to follow his dream of a career as a chef, and this eventually lead to an invaluable opportunity to work with the renowned chef Nathan Outlaw at his flagship, two-Michelin Star restaurant in Port Isaac. Working as a Sous Chef in an establishment as prestigious as this is where David really cut his teeth and mastered the art of fine dining, and where he developed his love, and vast experience, of sourcing and preparing fresh fish and seafood to the very highest of standards.
David’s style of cooking fits the ethos of Restaurant Meudon perfectly, as does his energy, attitude and sense of adventure when it comes to creating dishes for our seasonal menus. The strength of British cuisine has always been in its exceptional ingredients, and Meudon has access to some of the finest local produce in the country, being in an enviable location nestled between the rolling hills of Cornish farmland and the bountiful ocean. The whole kitchen and front-of-house team love working with David and the wealth of experience that he brings. With everyone working towards the same goal, the results are simply astounding (and delicious!).

Securing the talents of a chef like David is a key element in keeping us ahead of the competition with incredible, innovative dishes that accentuate the flavours of our wonderful Cornish produce.
Describing his style of cooking, David says: “I would say that it’s produce-led, simple, and not over complicated. The flavour is the most important element. I’m super excited about using local produce, Cornish fish is some of the best in the world. From the seas to the farms, this county grows wonderful produce. Much of the success of my career so far has been due to choosing to work with great people and a whole lot of hard work, and when the opportunity arose to work at Restaurant Meudon, it was quite an easy decision for me. Besides the beautiful location, I really felt that Meudon would offer me the canvas that I need to create wonderful food, and I clicked with the rest of the hotel team almost instantly”.
